Today Tricia and I had a peppermint/candy cane overload.
We made three yummy treats...yes three!
I think white chocolate was made to go with peppermint.
:)
Did we get carried away?
Uhh no!
Here is dessert number 1:
White Chocolate Covered Peppermint Cookies
These are super easy to make, yet look like they were made by some fancy shmancy place.
Nope.
Just Tab in the kitchen with these!
You will need:
Oreos
White chocolate coating (I used Plymouth Pantry)
Candy canes (crushed)
A cooling rack
Parchment paper
That's it!
Really.. that's all you need.
I only made around 16 cookies, and I only used 6 squares out of the chocolate package and there was still some chocolate left over.
This can obviously be changed according to how big your appetite is :)
First I melted the chocolate in the microwave, this took about two and half minutes.
While the chocolate was melting I smashed up the candy canes.
I covered the cooling rack with parchment.
I dropped the Oreos into the chocolate, flipped them over with a fork to coat both sides, and then scooped it up with the fork and let the excess drip off.
Then I placed the cookie on the parchment, and sprinkled a few candy cane chunks on top.
Threw these babies in the fridge for about 15 minutes....and whala!
